I also thought it was very overdone at 35 minutes. I'll try again at 20 minutes cook and 15 natural release. Sauce was very good. May try a can of fire roasted tomatoes instead of plain diced.

Instead of the glass dish with tomatoes . . . . I used parchment paper to wrap tomatoes, zuchinni, carrots, onion topped with fish. Wrapped in En Papillote style and then proceeded. Some glass even though oven safe is not recommended in Instant Pot.

I typically do this piece of meat on a gas grill or a broil, so this was a different cooking method. Turned out more like a piece of stew meat. I did put a bag of uncle Ben's white 90 second rice in the tomatoes and onions, and it didn't exactly save the day, maybe more rice? Kinda got what I expected, meh.

Don't put milk in instant pot when adding liquids. It doesn't allow for pressure to build.

I made this recipe tonight, and I was seriously disappointed in the doneness of the meat. It was tender, but definitely over cooked and very dry. I thickened the liquid a bit with cornstarch, sliced the meat and let it sit in the liquid for a few minutes while preparing the dishes. The gravey type liquid with the tomato’s, maple syrup, onions, and fresh garlic was absolutely delicious and saved the meal! I will make this recipe again, however, I think we need to shorten the cook time in the InstaPot to approximately 15 to 20 minutes tops. Then, if the meat isn’t tender enough yet, remove it from the pot, let it sit for 5 to 10 minutes, slice, and return to the pot, secure the lid and cook for 5 additional minutes on the Pressure Cooker or regular setting.

In reply to <a href="https://instaextras.com/london-broil-instant-pot-recipe/#comment-146">Ascension</a>.

Whenever the meat is tough, the best thing to do is pull it out, let it sit 10 mins., then slice, then replace meat to the instant pot. Use the manual setting and set for 5 mins. The meat will be more tender and will have absorbed even more flavor from the sauce, because of the added surface area of each piece. If ever a piece of meat is tough, it means that the cooking time was not long enough. Don't give up.

The can of diced tomatoes and liquid rendered from 2 cups onions would provide enough
